It has taken me a long time to convince my children that they can eat foods that are all mixed up. It has only been in the last couple of years that I have been able to serve them chili. Which is a huge relief for me as it is a great meal to make in the crock pot for those busy days when you only have a little time at home before running out again.
I think that they like this recipe because they have had a hand in making it their own. This is a take off of the one that their grandma makes them. No idea if there is an original recipe or not. It is a recipe that was verbally passed down and we made changes to suit our likes.
1 can (28oz) of tomatoes diced
1 envelope of onion soup mix
1/4 tsp pepper
2 tsp chili powder
1/4 cup ketchup
1/2 tsp garlic or 1 clove garlic, minced
2 cups chopped onion
2 (14 oz) can kidney beans with liquid
1 (14 oz) can baked beans in tomato sauce
1 Lb bacon, chopped, fried & drained
1 Lb lean ground beef
Combine first 11 ingredients in 5 quart (5L) slow cooker/crock pot. Stir well.
Add fried and drained bacon to crock pot. Scramble-fry ground beef until well cooked and nicely browned, drain excess fat. Add to the crock pot. Stir. Cover.
Cook on low for 8-9 hours or on high for 4-4 1/2 hours.
***Can also cook on the stove top if in a hurry. Bring to a boil. lower heat, simmer 20-30 minutes.
